I don’t know about you guys but I am ready to scream –TGIF!!! It has been a very long week for me. I have had a very hard time keeping up with everything on my plate. Earlier this week I had one of those days where I felt like I was going to have a mini breakdown. Most days I am pretty much always doing something from the moment I get up until I go to bed each night. This week there were so many things on my to do list I just couldn’t catch up! So, I whined to my husband and a few friends that would listen, popped a Stouffer’s meal in the oven and took deep breath
My husband has had to work a little more than usual over the past few weeks which has made for a crazy schedule. We have missed our “mom’s night out of the kitchen” for several weeks now. I did make my husband pick up Subway one weekend but it just isn’t the same. This is my last weekend where we have nothing on the schedule. Jake’s baseball games start up next Saturday and the puppy training classes start next Sunday. Pair that with various birthday parties and other scheduled events and I don’t expect to have much sanity left -tee hee.
This weekend I am going out to eat and attempting to get ahead so I don’t have a repeat of this crazy week. Wish me luck!!
Since I had a crazy week. I did not get to shop the sale like I had planned. I did a quick run to the store while the boys were in school. I wanted to make Laurie’s Korean Beef Tacos so I had to get a few ingredients. Let me tell you–they were FANTASTIC. I highly recommend you guys give the recipe a try. I did add about 2 tablespoons of brown sugar to the slaw as well as some sesame seeds. Other than that, I stuck to her recipe and everyone loved it. The boys just had the beef as the slaw had a fabulous little kick!!

I spent about $24 this week for just a few items. Not the best for weekly shopping totals…but, boy oh boy–that recipe was worth it. I also have plenty of the hot pepper sauce to make it again.
