To kick-off the great savings and enjoy valuable time around the dinner table with your family, check out this awesome recipe that you can find at BestMealsatHome.com, which uses Progresso Lemon Pepper Crispy Bread Crumbs and Old El Paso Flour Tortillas:

Prep time: 20 Min
Start to Finish: 20 Min
Makes: 5 servings (2 tacos each)

Ingredients:

Fish

  • 2 tablespoons all purpose flour
  • 1 egg
  • 1 tablespoon water
  • 1 cup Progresso® Lemon Pepper Panko Crispy Bread Crumbs
  • 1 lb white fish fillets (such as tilapia or catfish)
  • 2 tablespoons vegetable oil

Tacos

  • 10 Old El Paso® Flour Tortillas for soft tacos & fajitas (6 inch; from 8.2-oz package)
  • 1 medium avocado, pitted, peeled, and chopped
  • 1 medium tomato, seeded, diced
  • 2 teaspoons lemon juice
  • 2 tablespoons chopped fresh cilantro
  • 1 small jalapeño chile, seeded, finely chopped if desired
  • 2 cups shredded lettuce
  • 1 small lemon, cut into wedges

Directions:

  • In shallow dish, place flour. In another shallow dish, beat egg and water. In another shallow dish, place bread crumbs. Coat fish with flour. Dip into egg mixture; coat well with bread crumbs.
  • In 12-inch nonstick skillet, heat oil over medium heat. Add fish; cook 6 to 8 minutes, turning once, until fish flakes easily with fork. Cut into 30 bite-size pieces.
  • Meanwhile, heat tortillas as directed on package. In medium bowl, mix avocado, tomato and lemon juice. Stir in cilantro and jalapeño chile.
  • Fill tortillas with fish, avocado mixture and lettuce. Serve with lemon wedges.
  • Oven Method Heat oven to 375°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray. Follow step 1 above. Place fish in baking dish; drizzle with 2 tablespoons melted butter. Bake uncovered 15 to 20 minutes or until fish flakes easily with fork. Continue as directed in recipe.

    I will make some Taco Pasta using one of the Old El Paso Taco Kits! I generally just use about 12 oz of whatever pasta we have on hand, cook the ground beef then add the taco seasoning packet to it. Then I mix the beef with the pasta, add the taco sauce and about 8 oz of shredded cheddar or mexican cheese then bake in the oven for about 15-20 minutes! It’s easy and quick and my family loves it!

    I use a couple of cans of Swansons chunk white chicken a quarter cup of Hellmanns Mayo and two cans of campbells cream of chicken condensed soup put it all in a skillet and heat until i is bubbling hot. Meantime cook a couple of cups of Barilla pasta, drain and pour chicken mixture over the pasta in a casserole dish. I add some shredded cheese on top and put in the oven for 20 minutes. Voilla supper is ready.

    Here is a Very Yummy Casserole

    2c. cooked Chicken breast
    1c. chopped Celery
    1c. cooked rice
    1 can Campbells cream of chicken soup
    3/c Mayo
    1c sliced water chestnuts
    1/4c chopped onion
    1/2c. sliced almonds
    1/c shredded Cheddar Cheese
    Salt & Pepper to taste

    Mix all ingredients except cheese
    Bake uncovered at 350 for 45 minutes The last 10 minutes sprinkle cheese

    That it We love love this and it is so easy!!!

    We love to make homemade meatballs at home! The other night we used a mixture of ground beef and ground pork. To that add one egg mixed with freshly grated parm and a dash of worsteshire sauce. To that add 1 cup of Progresso Itilian Panko Breadcrumbs. Mix well, brown the meatballs then bake with your favorite sauce on top until cooked, usually 1/2 hour to an hour, depending how long you browned them first. These were seriously the best batch I had ever made and it’s because of the breadcrumbs with panko!
    I could really use that Publix gift card to get some of the awesome deals Publix has right now;)
