So how many of you guys have stocked your pantry with the Hurst Family Harvest beans that are on sale for $1.99 per bag at Publix? You only have a few more days to save – they will remain $1 off retail through 2/24. Dried beans have a nice long shelf life so definitely grab them while they are on sale. Your budget will thank you!
I know lots of you guys have grabbed some beans since many of you have been wonderful to share your recipes and reviews of the Hurst beans. A couple of folks even sent over secret family recipes – I would share but I have been sworn to secrecy!
For you guys trying to trim your budget, you can do so with ease when you include beans in your menu. Meatless Monday will be your family’s favorite meal when a big bowl of soup made with Hurst Beans is served.
I like to prepare the beans because I can control what I am feeding my family. I control the seasoning and the taste. One big pot of beans can be used for several meals which means I save time and money! Factor in the nutritional value and you really do have a perfect food that is sure to please everyone!

My favorite recipe is with the black bean soup…. I prepare the black beans but make a black bean and avacado salad instead of soup….. salad is a must in our house with every meal…even soup!

I haven’t tried hurst family yet…I know I must be the only one….but i would love to win this!!
Ok, I hope I win this time! My favorite recipe using Hurst Family Harvest beans is:
Southwestern Pinto Bean Soup
MAKES: 6 servings
2 cups dry pinto beans
5 cups cold water
2 14 ounce can reduced-sodium chicken broth
1/2 cup water
1 large onion, chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper (I use a little less)
1 14 1/2 ounce can fire-roasted diced tomatoes, undrained
Shredded reduced-fat Monterey Jack cheese (optional)
Snipped fresh cilantro and/or sliced green onions (optional)
Desired crackers (optional)
1. Rinse dry beans. In a Dutch oven combine rinsed beans and the 5 cups cold water. Bring to boiling; reduce heat. Simmer, uncovered, for 10 minutes. Remove from heat. Cover and let stand for 1 hour. Drain and rinse beans.
2. In a 3-1/2- or 4-quart slow cooker combine beans, broth, the 1/2 cup water, the onion, garlic, cumin, and cayenne pepper.
3. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.
4. Stir in undrained tomatoes; cover and cook for 30 minutes more. If desired, partially mash mixture with a potato masher, leaving soup chunky. If desired, top individual servings with cheese and cilantro and serve with crackers.

we love beans…pot of beans with ham…red beans and rice…baked beans with bacon and polish sausage.
BUT, recently I have gotten into making cookies with beans…very unusual/healthy alternative like navy bean oatmeal chocholate chip…and pinto applesauce oatmeal spice…so good.

White bean chile, I just substitute chicken broth for water, add a can of rotel, and serve with sour cream, cheese, chips, salsa, etc.

We tried the Bayou Cajun Red Bean Soup but used only about half the liquid they recommend to make it more of a chili and less than a soup. Also added some cooked shrimp, thickly sliced mushrooms and chunks of corn on the cob.

Split pea soup with grated potatoes and carrots plus a little onion for seasoning. I usually use ham shreaded as small as I can and let the beans be the center of my soup.

Soup with green beans, tomatoes, chunked leftover pork and black beans
BLACK BEANS SOUP RECIPE
2 cups Hurst Family Harvest dry black beans
8 cups water
1 cups onion, chopped
1 cups green bell pepper, chopped
1 to 2 cloves garlic
1 teaspoon salt
Pinch of pepper
2 tablespoons olive oil for sautéing
½ teaspoon oregano
½ teaspoon cumin, ground
1 bay leaf
2 tablespoons vinegar
1/4 cup dry white wine (Vino Seco)
1 teaspoons sugar
You may drizzle some olive oil over the cooked beans at the very end
In a pan cover the dry beans with water and let stand overnight. Cover with lid. Next morning drain and discard water.
Put the rinsed and soaked black beans back in the pan. Add fresh water to cover the beans and maybe a cup more (some will evaporate while cooking and about a tablespoon of olive oil. After bringing the beans to a boil, reduce heat to low, cover, and cook for about an hour until the beans are soft and tender.
(To avoid above procedure, you may use a pressure cooker following their directions but it usually only takes around 20 to 25 minutes for the beans to cook.)
Preserve this water, do not drain, since it will become the soup!
Take the chopped onion, green pepper and garlic and sauté in olive oil. After onion is translucent, add to cooked beans and stir with ladle.
Add salt, pepper, cumin, oregano, bay leaf, vinegar, and wine. Stir with ladle. Simmer while covered over low heat for 15 to 20 minutes, while stirring once or twice. Remove bay leaf.
Stir in the sugar. Add additional salt and pepper to taste. You may garnish with cooked bacon bits, chopped onion or cilantro! Serve with warm italian bread or bread of choice as a compliment or served over cooked white rice is absolutely divine!!
Also it could be served with salad on the side and/or meat of choice. Whatever you choose….just enjoy!!!!

My favorite recipe is pretty simple. Just mix some leftover chicken or turkey into the White Bean Chili. That way my boys know they are not just eating beans… which would be very upsetting.

White bean chilli with chicken/beef/ham with a pinch of cinammon, ground ginger and ground cloves.
I modified their split pea soup recipe to be vegetarian by leaving out the ham and taking some suggestions from the split pea soup recipe made by the moosewood cafe. It was delicious.

My favorite recipe using Hurst famiy lentils is to make lentil-vegetable biryani, an Indian dish made vegan. In heavy soup pot, saute 1 c. chopped onions in 1/2 tsp. canola oil until brown. Add a 1 and 1/2-inch piece gingerroot, grated, and 8 cloves garlic, minced, and stir for several minutes. Add 3/4 c. soaked lentils, 1 and 1/2 c. water, 1 cup sliced carrots, and 2 cups canned tomatoes. Add 4 whole cloves, 1 stick cinnamon, 1/2 tsp cardamom, and 1 tsp turmeric. Bring to boil, lower heat, cover, and cook 15 minutes. Add 1 cup basmati white rice, 3 potatoes cut into 1/2-inch cubes, 3 cups hot water, 1 cup fresh or frozen peas, and 1/2 tsp. salt. Cover and cook 25-30 minutes until rice is done. Let sit several minutes before serving.

Our family likes the Split Pea soup recipe (from Hurst’s website). We make a few minor alterations to our version though…We use 7 cups of chicken broth instead of water to cook the soup because it gives it a richer taste. We also add 3/4 cup of finely chopped carrots to ours
We freeze half of the recipe and have a ready to eat delicious homemade meal for a busy day!
You will need:
■1 package Traditional Split Pea Soup
■2 tbs. olive oil
■1 cup chopped onion
■2 cloves chopped garlic
■1-2 ham hocks, or 1/2 lb. diced ham
■Juice from 1 lemon
7 cups of chicken broth
3/4 cups finely chopped carrots
Instructions:
1.Rinse and sort through the dry split peas.
2.Add olive oil to a large soup pot over medium-high heat. Sauté the onion and garlic for 5-6 minutes until onion becomes translucent.
3.Add 7 cups of water, ham, and rinsed peas. Turn the heat to high and bring mixture to a rolling boil. Stir periodically.
4.Reduce the heat to low and cover the pot with a lid. Simmer (covered) for 45 minutes.
5.Uncover and remove the ham hocks. (Trim ham off of bone and return to pot).
6.When soup reaches desired consistency, add lemon juice and contents of seasoning packet.
7.Simmer for additional 10 minutes before serving.

Ranch Beans!
Cook your favorite 2 types of beans (we like black beans and pintos although we sometimes also add a few chickpeas!) 4 cups of each type of bean. Mix them with one jar of spicy deli style salsa and 1/2 cup of brown sugar or sugar in the raw. Bake for 1 hour at 350. Yum yum!

■2 cloves chopped garlic
Soak beans overnight. Then add ingredients in some olive oil. Let simmer 2 hours covered. Add 1 lb of chopped up cooked chicken (rotisserie). You can add in some salsa too. Then top with sour cream, cheese and corn chips. Yum!

I like the White Bean Chili I use the recipe on their website but I add a few more things.
1 package White Bean Chili
1 cup chopped onion
1 cup diced green bell pepper
2 cloves chopped garlic
then I add alittle red pepper for flavor , alittle chili powder and when it is all done I add cheese and sour cream to the top of it. Yummy

I made the best baked beans from scratch with northern beans. Just have bacon onion, garlic salt, pepper, brown sugar, and ketchup. Cook all day and its done and tastes amazing

I love to make bean soup for my family. I buy a bag of Cajun 15 bean soup, place in crockpot with 2 cups of the tomatoes chopped we grew last summer, 1 oninion chopped, 1 jalepeno chopped fine, two cups chopped leftover ham, and chicken stock. Just before serving we add 1 Tablespoon lemon juice. Delicious! We cook with Hurst’s beans a few times a week because beans are healthier foryou the meat! =) Also Hurstbrand requires less sorting than other brands so they are quicker to use! We love Hurst!

my favorite recipe is simple – a cabbage and bean stew made with different Hurst beans, a head of cabbage, 1 lb of organic carrots, 1 heart of celery, 2 cans of stewed tomatoes and 2 cans of chicken broth. It’s gluten free, the boys will eat it and it is very healthy. For myself, I add some chopped onions and garlic to make it a bit more ‘punchy’!

Split pea soup with smoked sausage
This is what I’m cooking today. It’s so simple and it’s in the top five most requested dishes around here.
White Bean & Potato Soup
Ingredients:
1 package Hurst Family white beans
6 cups water
1 bay leaf
1 teaspoon dry thyme
4 potatoes, peeled and quartered
¼ cup milk
2 stalks celery
1 large onion
1 clove garlic
1 teaspoon salt (or to taste)
Pepper to taste
Bunch of chopped parsley
Directions:
1. Soak beans overnight or use quick-soak method (boil for two minutes, cover, remove from heat, and leave covered for 1 hour)
2. Drain beans, add fresh water, bay leaf, and thyme. Bring to a boil, reduce heat to low, cover, and cook for 1 hour.
3. While beans are cooking, steam potatoes until tender (as you would if you were making mashed potatoes).
4. Add milk to potatoes and mash with a fork or immersion blender.
5. Add potatoes, celery, onion, garlic, salt, and parsley to the beans. Stir, cover and cook on low for 1 hour.
6. Add additional salt and pepper to taste.
Notes:
Dried parsley can be substituted for the fresh (I think the Publix brand is the most flavorful and fresh-like)
I add an extra stalk or two of celery (because I love that taste) and sometimes an extra onion, but that may be too much for some folks.
Add grated cheddar in the soup bowls.

I love chili using these beans. I have tried so many different types and I love them all.
I love making beans now that I’ve seen everyone else’s recipes. I like making just simple beans with ham. And any leftovers taste even better the next day.
I don’t have arecipe of my own but my mother makes soup with the white beans v8 and whatever assorted meat left overs and either noodles or rice we have. Though I can’t make it nearly as well when I try.
