What’s For Dinner 11/1

November 1, 2011

Whats For Dinner 11/1I have decided that making my menu is easiest when I am hungry–tee hee! I actually popped this one out in about 10 minutes since there was so much to choose from this week.

Can you tell that I am going for easy one pot meals? My crock-pot is getting quite a workout here lately!

I have a request and hope that you guys can help me out. I always use bottled pasta sauce. We have a couple of favorite Bertolli sauces that I rotate between for my recipes. When I was working, I had a client who made the most phenomenal pasta sauce. This was a family recipe that had been passed down for many generations and while he would give me a basic idea he would never share that secret recipe! So…any of you guys willing to share your favorite “to die for” pasta sauce? I would love to cook up a big batch and freeze it. Email it to me or share it in the comments for everyone to see.

Michelle, not sure if you heard of this subscription but I like her concept. I did a subscription but haven’t tried it yet. It reminds me of a blend between “Whats for dinner” from your blog, e-mealz and freezer cooking. I am going to give it a try but I wondered if you wanted to see from all your readers what their various “methods” for meal planning are. Flylady.net has a concept too that appealed to me – write down what you ate for two weeks (even if you ate at a restaurant) and that is a basic meal plan you can rotate from. Then shop and stockpile the key ingredients of these 14 meals and you always have something for dinner!

Might be a good reader spotlight or section??? I would love to hear what others have tried (maybe even the ones that didn’t work) and what they like!

I was gonna be a wise guy, but I see I have already been beaten to the punch line by Clare and AmyC! ha ha…..I was gonna say I’d see you on Wed. for the CHicken and dumplings! I need to make some of those….with the chicken breast on sale for $1.99, I will wait until I do my shopping Thurs. and make it over the weekend. Thanks Michelle for giving me ideas for dinner…

Barefoot Contessa’s Tomato Sauce is the best! I usually triple the recipe and freeze it.

Pasta sauce is super easy and easily adaptable to your family’s likes. I prefer using tutterosso tomato purée (on sale this week). I don’t use measurements much when I cook, so bare with me.
Sauté 2-4 cloves minced garlic and chopped onion in olive oil (a few swirls around the pot). Add 2 large cans purée and 1/2-3/4 can of water. Keep pot on low. Add salt, pepper, parsley (or Italian seasoning) and cayenne pepper (if you like it hot, my kids don’t like it that way).
If I have veggie purée already made in the freezer, I like to add puréed carrots for extra healthy-ness!
Add cooked meatballs or Italian sausage to sauce and let it simmer for 30 min or all day in your crockpot.
