Last week I shared a recipe that I came up with using Hurst Family Harvest beans. Beans are a favorite food here at my house, my guys love pretty much every bean out there. That makes me one happy gal! Not only are beans healthy they are also super simple to prepare.

Dried beans are one of the most frugal meal options available! Through 10/21, all the varieties of Hurst Family Harvest Beans are only $1.99 at Publix! This is definitely the time to stock up! One package of beans can make a meal for a very big family or a side dish that can be used over several different meals.

My husband has requested bean dip for his football game this weekend…so I will kill two birds with one stone. I will cook up a big pot of black beans on Friday night as part of our meal and then will use the leftovers to whip up his bean dip for College Football-o-rama!! Heck, I might even have some extra to throw together some Southern Caviar for myself (I make mine with black beans–YUM!!)

For all you who have emailed me asking if cooking dried beans is really as easy as I say it is…the answer is – absolutely!! Each Hurst Family Harvest package comes with a fabulous recipe and my crew has loved them all. Heck, you could actually just pop the beans in the slow cooker with water and the Hurst Family Harvest seasoning pack…maybe add a hambone and you have perfectly seasoned beans with almost no effort!!

      I agree! It’s one of my most favorite meals ever! Big pot of pintos and ham and cornbread on the side, slathered in butter and maple syrup (or honey). Mmmmm…I’m so glad it’s fall because I can’t wait to make it again. :D

    As I said in the other contest…we LOVE beans in our home…it is a staple in our weekly meal planning…so good/healthy and economical too. One of our faves is traditional big ole pot of beans (great northern) with onion, garlic, carrots…a ham bone/hock…served with thick sweet corn bread and fried potatoes and onions…sweet tea.
    Some other recipes we use…my mom’s (dry bean start) homecooked baked beans…our kidney bean/egg/pickle salad…our yummy tortillini soup…corn/bean/seafood chowder…YUMMY and delicious italian style beans/pasta dinner…blackbeans with saffron rice and fried fish…and, this one our awesome Fabes con Almejas meal…as I said we love and eat lots of dry beans!!! thanks
    PS..you know you can use bean puree in many dishes too…to thicken and in desserts too! It is truely very versitile :)

    I grew up learning to love beans watching my parents coupon to buy groceries for six kids :) heehee.. of course.. we never had so many different flavorings sooo I’m thinking the red bean Cajan one would be my favorite! I love that it has the options for substituting the sausage over to fresh shrimp, fish, or other seafood… for the weeks when you have a little “extra” cushion in the coupon budget..lol!     I would love to try the HURST black beans in a recipe my family loves! I would cook the black beans in my crock pot until tender, adding salt.

    Prepare a roast (pork or beef boneless) in the oven and season with Season All and onion/garlic.

    Saute green pepper, red pepper, sweet onion, and some garlic in about a tablespoon of olive oil.

    Cook white rice w/saffron in chicken broth.(making it yellow) Then I add the veggies and oil to the rice.

    Slice the roast and thicken the au jus with flour/water or cornstarch to make a thicker gravy.

    Stack on a plate in the following order to serve….
    Rice, then black beans, then roast, then gravy.

    It is so delicious! I would love to use the Hurst beans for this family favorite!!

    I like to fix a large pot of black beans, a large helping of mexican seasoned chicken and beef, and a large batch of homemade mexican rice on Saturday for Mexican night with our family. I use the leftovers to make lunches for my husband and I for the week. I make mini beef and chicken chimichangas with black beans, taco salads with the beans and meat, and burritos with the beans, meat and rice. I mash some of the beans and sprinkle cheese on top to melt for dipping tortilla chips into for a side dish. Black beans definitely do not go to waste at my house!

    Moms Hernekeitto (finnish split pea soup)

    1 small onion; chopped
    2 cup cubed potatoes
    1 1/2 lb smoked pork hocks
    1 cup chopped carrots
    6 cups water
    2 cups dried yellow or green split
    2 cups cubed fully cooked ham
    5 Whole Allspice
    1 dash pepper
    1/4 tsp salt
    1. Wrap allspice in cheesecloth and tie with string to form a spice bag 2. In a large saucepan, combine water, peas, ham, and allspice. Bring to boil. Reduce heat. Cover and simmer for 1 hour. 3. Add potatotes, carrots, onion, salt and pepper. Return to boiling. Reduce heat. Cover and simmer for an additional 30 minutes. 4. Remove spice bag. If using pork hocks, remove and cool slightly. When cool enough to handle, remove meat from bones and coarsely chop. Discard bones. Return meat to soup. Makes 8 to 10 servings.

    I like to make black bean soup. In a crock pot put 1 onion, 2 celery stalks, 1 carrot, 1 bell pepper, 2 garlic cloves, all chopped up fairly small (a little larger than the beans) add to that 1 teaspoon of cumin and oregano and two bay leaves. Sort through the beans and add them to the pot, along with one large box of chicken or beef broth. Let cook for 6 to 8 hours on high, until the beans are soft. You can add water to the pot if you want it “soupier”.

    I combine White Bean and Black Bean for Chili. Then make a side of either rice, pasta, or baked potatoes to put over. Toppings on side: onions fresh or crisp, cheese, sour cream, and hot peppers. Granddaughters have to have sweet corn bread also.

    actually, we just bought some of the split pea soup at publix and we got some diced ham in the meat section and well be making split pea soup crock-pot style this tuesday! :D sooooo, thats what id do with their product! lol.

    Taco night is a huge favorite in my house and the Chipotle Lime Black Bean soup would go very well with it on its own. However, I was thinking maybe a taco-shelless taco night using the Chipotle Lime Black Bean soup as my base and adding all of our favorite taco night ingredients (i.e. ground beef, yellow rice, peppers and onions, cheese and of course sour cream) to the soup would be AMAZING!     Truthfully I use beans all the time. I add them to salads, soups, and even make dips for veggies and sandwich spreads instead of mayo. Beans and rice together make a complete protien, so healthy!

    I’m torn. I’d either use the beans in a risotto with broth, finely chopped celery and fresh herbs…maybe with a side of honey glazed ham. OR, you can’t go wrong adding them to my Mom’s homemade soup, which has lots of lean ground beef, okra, and a hearty broth. Paired with a peanut butter and jelly sandwich (with the pb whipped w/ apple jelly, of course) and you have the perfect autumn meal!
