Weekly Meal deal – Spicy Peanut Chicken

Amanda over at A Few Short Cuts has our weekly meal deal. I had to laugh a little at the comment Amanda made in the email she sent with the recipe. She said this was not a dish she would normally make. I was very excited to read the recipe as this is a dish I would (and will) totally make-it sounds delicious!
Today she has Spicy Peanut Chicken on the menu! If I had not forgot fresh ginger when I was shopping earlier this week I would have everything I need. You definitely have to go check this one out. The best part is that you can make this for about $1.50 per serving…I’d say that is definitely a meal DEAL!

















When you buy your ginger wrap it in plastic wrap then into a ziplock freezer bag and freeze it. When you need a small amount just take it out and grate what you need then return it to the freezer. Lasts forever and no more waste, plus you always have some on hand for recipies like this!
That is exactly what I do…I usually have a few little pieces but I did a freezer clean out over the holidays and said I was going to replace it and keep forgetting!
I don’t even use powdered ginger anymore…fresh is so much better

This looks extremely tasty! I love asian foods – especially with ginger!
I tried making this for “date night”, which was dinner and a movie at home after the baby went to bed, since this is “No Eat-Out January” for us! The recipe was great! But I might have used fewer peanuts, maybe 1/2-3/4 cup instead.)
