“Snack”urday – Nilla Wafer Cake

Amanda sent me a “Snack”urday treat that I have never heard of and can’t wait to try–Nilla Wafer Cake!! I have to say it looks so delicious and since Amanda always gives us step by step instructions with pictures you know it will be super simple!!

By the way we have been out exploring our backyard this morning and guess what I found…two huge blackberry bushes! I think another cobbler is in order!! Yes we have a big backyard…

I made this tonight from the past boxes of penny wafers. My three year old had three servings even after eating half a watermelon. THanks for another “staple” recipe. IS there a shortcut cookbook, if not Thanks for all the great recipes

I was just thinking the other day about putting a cookbook together for my readers. If you are interested it may just be the push I need!
OK…I messed up and left a comment in the wrong place…LOL. I made this today and it was great!! I’m not fond of flaked coconut, so I chopped up dried cranberries instead. It was wonderful….my husband loved it. It is very moist. Also, I used the lowfat wafers with no problems.
