I personally know several people who have to struggle with finding gluten free recipes so I am just thrilled that Amanda can pull together recipes are not only gluten free but are also delicious!
Go HERE to check out her recipe. I think it is also a fabulous recipe for those who prefer to limit the amount of processed foods used in their diet. The recipe is healthier and I bet only takes a few minutes beyond what you would need to throw together a box mix!

Thank you so much for this recipe! My MIL is allergic to wheat, corn, and a number of other things. It looks as though this is something she can eat though, so I might just have to surprise her with a real birthday cake for her birthday next month. As much as we love ice cream, the all ice cream cakes get a little old after a while!
