“Deal”icious Meals: Home Made Chicken Broth & Chicken Pot Pie

Amanda at A Few Shortcuts has a fantastic frugal recipe for you all today–homemade chicken broth! Go HERE to check out the fantastic recipe! I can’t wait to make this one–we go through a lot of chicken broth around here!

After you make her recipe you will have some cooked chicken. I thought I would share a super easy, super delicious recipe to use that cooked chicken: Quick and Easy Chicken Pot Pie!

This is a great meal to throw together in a flash (and I have found it to be kid-friendly :-) )

Chicken Pot Pie
Ingredients:
About a cup of pre-cooked diced chicken breast
1 tsp butter, margarine or olive oil
1 medium onion-chopped
2 cans of cream of chicken soup
Bag of frozen mixed vegetables (peas, carrots, etc…)
1 boiled egg -chopped (optional)
1 -2 tsp. Tarragon (I love tarragon…but it has a unique flavor so adjust the quantity to your taste)
salt and pepper to taste
1 box refrigerated pie crusts (2 crusts are in each box)

Saute the onion in the butter until translucent
Add all other ingredients (except crusts) and cook until the veggies are heated and no longer frozen (approx. 5 minutes)
Place one pie crust in your pie plate (press to the sides of the pie plate leaving the top hanging over the edge of the pie plate)
Pour the filling into the prepared pie crust.
Top with the second crust and press the two pie crust edges together (nothing fancy needed–just seal the crusts together)
Use a fork to make a few air holes in the top crust.
Bake at 375 degrees for 30-40 minutes (or until top crust is nice and golden)

Cut and serve with a salad!  Yummy!

I think most of you will have a lot of these items in your pantry… but here is an approximate break down of the costs:

Box of pie crust ~$2
Onion ~.50¢
2 cans of cream of chicken soup ~$2
Bag of Mixed Veggies ~$1
Chicken (split breasts are on sale $1.49/lb) ~$1.50
Fresh Express Salad will be $2.50 – $1/1 Smart Summertime Savings Q = $1.50

Total for the meal: $8.50 (which I think is an overestimation)!  That is less than $2.15 per person for a family of 4
