Slow Cooker Spaghetti Sauce – Publix Super Meal

With the Italian Days sale I had to share my family’s absolute favorite Slow Cooker Spaghetti Sauce.  The best thing about this one is that you throw everything in the crock pot and let it go all day. You end up with a phenomenal sauce that will feed a crowd. I typically cook it up then freeze half. Each half will be dinner for us plus a couple of days of lunch leftovers.

Besides being a perfect topping to basic spaghetti, it’s also wonderful for yummy baked pasta dishes. You can do a rocking baked ziti or lasagna with this sauce.

Slow Cooker Spaghetti Sauce

Ingredients
  • 1½ pounds lean ground beef
  • 19 oz Italian sausage (removed from casing)
  • 1 large onion, chopped
  • 3 - 4 garlic cloves, chopped
  • 29 oz can tomato sauce
  • 28 oz can diced tomatoes
  • 6 oz can tomato paste
  • ½ cup red wine
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon dried parsley
  • 1 tablespoon dried basil
  • 1 teaspoon dried oregano
  • cooked spaghetti
Instructions
  1. Add the ground beef, Italian sausage, onion and garlic to a pan and cook until the meat is browned. Break up and crumble the meat as you stir.
  2. Drain the excess fat and remove to your slow cooker.
  3. Add all remaining ingredients (except pasta).
  4. Cook on low for 6 - 8 hours.
  5. Serve over cooked spaghetti noodles.
  6. Top with parmesan if desired.

Chicken Gyros – Publix Super Meal

With the BOGO on Toufayan Flatbread in the Publix ad this week, I knew exactly what I was going to make…Chicken Gyros!

Somehow I often forget how much I love this recipe. Then I make it and want it again the next week and then the next and so on. It’s a super simple recipe. You can prep everything early in the day then grill it up right before you call your crew to the table.

You will definitely want to add this one to your menu soon! Grab that BOGO Toufayan, pull some chicken from the freezer and serve your crew a dish they will devour (my guys did!!)

Chicken Gyros

Ingredients
  • 1 - 1½ lbs boneless skinless chicken, cut into strips - I do a mix of chicken breast and thigh meat
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon oregano
  • 1 teaspoon red wine vinegar
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 cloves garlic, minced
  • 5.3 oz Greek yogurt
  • 1½ teaspoons lemon juice
  • 1 clove garlic, minced
  • 1 cucumber, peeled, seeded and chopped
  • 1½ teaspoon dill weed
  • ½ teaspoon salt
  • ⅛ teaspoon pepper
  • lettuce, chopped
  • tomatoes, chopped
  • feta cheese
  • Kalamata olives, chopped
  • red onion, thinly sliced
  • flatbread
Instructions
Tzatziki Sauce
  1. Combine the yogurt, 1½ teaspoons lemon juice, 1 clove of garlic, cucumber, dill weed, ½ teaspoon of salt and ⅛ teaspoon of pepper into a food processor.
  2. Pulse until combined and to the consistency you prefer - we like ours slightly chunky.
  3. Refrigerate for at least 30 minutes--longer is better.
Chicken
  1. In a medium bowl, mix the olive oil, 2 tablespoons lemon juice, oregano, red wine vinegar, 2 cloves of chopped garlic, ½ teaspoon of sale and ¼ teaspoon of pepper.
  2. Add chicken to mixture.
  3. Cover and refrigerate at least 30 minutes.
  4. Grill the chicken for 3-4 minutes per side or until cooked through.
Assembly
  1. Grill or warm the flatbread.
  2. Top each flatbread with the grilled chicken,Tzatziki sauce, lettuce, tomato, olives, red onion or your favorite topping.
  3. Fold and serve warm.

I saw that peperoncini pepper BOGO and knew exactly what I wanted to share with you guys this week. This recipe for Slow Cooker Peperoncini Beef Sandwiches is a huge family favorite here at my house. I love it because it is incredibly simple and absolutely delicious.  The meat is so tender and that au jus…oh my, I could almost drink it – tee hee.

You guys will definitely want to put this one on your menu this week. Easy and delicious is my favorite meal combination!!

Slow Cooker Peperoncini Beef Sandwiches - Publix Super Meal

Ingredients
  • 2 - 3 pound Chuck Roast
  • 1 16 oz jar Peperoncini Peppers
  • 1½ cups Beef Broth
  • 1 packet Italian Dressing (powdered mix from the packet)
  • 1 large Onion, thickly sliced - I used two small ones
  • 1 Au Jus Gravy packet
Instructions
  1. Place the roast in the slow cooker.
  2. Mix the pepper brine, beef broth and Italian seasoning packet in a small bowl.
  3. Pour the mixture over the roast along with all of the peperoncini peppers.
  4. Cover and cook on low for 6 - 8 hours
  5. Approximately 1 hour before you are ready to serve, toss in the sliced onion and cover.
  6. When you are ready to eat, pull out the meat and place in a dish/plate.
  7. Pour the Au Jus packet into the juices left in the slow cooker and stir.
  8. Shred the meat with two forks.
  9. Place the shredded meat on a hoagie roll with some of the cooked onions and peppers.
  10. Top with cheese if desired and serve with a small bowl of the au jus mixture.

Blue Cheese Sliders With Balsamic Onions – Publix Super Meal

Nothing was jumping out at me in the ad this week so I thought I’d share my recipe for Blue Cheese Sliders With Balsamic Onions. Everyone loves burgers right? I just love the tangy flavor of the blue cheese and onions with the sweetness of the buns. I like to do little sliders. They are a better size for my boys and they are also just more fun!

I almost never buy buns. Plus, it’s almost impossible to find a deal on slider buns…they are a rare find. It is honestly so easy to whip up a big batch of buns – there’s really no reason to buy them. This recipe is perfect for sliders, hamburgers and hot dogs.  There is very little effort involved with these and they taste so darn good. Really you are just dealing with the time it takes to proof the dough. I typically throw together the dough in the middle of the day and then bake them off in the afternoon. When the guys come in to the smell of that delicious bread they jump for joy – they know what’s on the menu!

Give these a try and you may never buy buns again!

Blue Cheese Sliders With Balsamic Onions

Ingredients
  • ¼ cup sugar
  • ½ teaspoon salt
  • ¼ teaspoon onion powder
  • 2½ teaspoons dry active yeast
  • 1 cup warm milk (warmed to 100º F)
  • 2 eggs
  • 4 tablespoons unsalted butter, softened
  • 3½ cups unbleached all-purpose flour
  • Sesame seeds, poppy seeds or dried minced onions
Instructions
  1. Mix sugar, salt, onion powder and yeast in a medium bowl.
  2. Slowly add the milk and whisk until the yeast has dissolved (10 - 15 seconds).
  3. Add one egg, butter and half of the flour to the mixture.
  4. Mix until there are no lumps.
  5. Add in the remaining flour a half of a cup at a time until the dough has formed and ready to knead. Note - you may not use the full 3½ cups.
  6. Knead the dough on a lightly floured surface for 3 minutes.
  7. Place the dough into a bowl that has been lightly coated with cooking spray.
  8. Cover with plastic wrap and place in a warm spot to rise for 1½ hours (until doubled).
  9. Punch down the dough, reshape and then re-cover with plastic wrap.
  10. Set in a warm spot for an hour to double in size.
  11. Preheat the oven to 425ºF.
  12. Cut the dough into 16 pieces and shape into balls.
  13. Beat the last egg with 2 tablespoons of water and lightly brush the top of the dough with the egg wash.
  14. Sprinkle with sesame seeds, poppy seeds or dried minced onions.
  15. Allow to rise for 15 minutes then bake on a 425ºF on a parchment lined baking sheet for 12 - 15 minutes until the tops are golden brown.
Notes
For the burgers: Saute a large onion in 1 teaspoon of butter or margarine for approximately 20 - 30 minutes until caramelized. Add 1 - 2 Tablespoons of balsamic vinegar and cook until completed reduced. Slice bun, add a 2 oz cooked lean beef patty, a heaping teaspoon of blue cheese and top with lots of balsamic onions. Serve warm!

Cajun Pork Tenderloin – Publix Super Meal

With the sale on pork and the Publix coupon, I thought this would be a good week to share one of my favorite pork recipes. My recipe for Cajun Pork Tenderloin is so easy and will definitely wake up your taste buds. You can adjust the heat if you don’t like it too spicy. I usually cut off the edges for the boys and they love it.

Grab some pork this week at Publix and raid your spice cabinet and you can have this one put together lickity split. I will share my recipe for my Vegetarian Creole Rice this weekend over on I Heart Kitchen – stay tuned!

Cajun Pork Tenderloin - Publix Super Meal

Ingredients
  • 1 - 1½ pound pork tenderloin
  • 1 teaspoon cajun seasoning
  • 1 teaspoon oregano
  • 1 tablespoon paprika
  • ½ teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon cumin
Instructions
  1. Preheat the oven to 350 degrees.
  2. Combine the spices and rub all over the pork tenderloin.
  3. Place on a shallow roasting pan and cook at 350 degrees for 30 - 35 min or until the thermometer reads 145 degrees.
  4. Rest for 5 minutes then slice and serve.

Easy Meatloaf Cupcakes – Publix Super Meal

Nothing was jumping out at me in this week’s ad so I decided to share a recipe that I can whip up just about any time – Easy Meatloaf Cupcakes. I always have lean ground beef in my fridge. Add in a few potatoes and some pantry staples and voila – a fun and delicious meal the whole family will love.

There is nothing fancy about this recipe. You can use your favorite meatloaf recipe and just bake it in a cupcake tin. The fun happens with a simple pastry bag and decorating tip. If you don’t have a pastry bag you could also just pop the potatoes in a plastic bag and snip the corner and then pipe the potatoes – easy breezy. A few green onions and crumbled bacon add a fun sprinkle effect to your cupcakes.

You really only add about 5 minutes to a standard meatloaf and potatoes meal. Why not take those few minutes to make dinner a fun experience for everyone.

By the way –wondering how to get super creamy mashed potatoes? I used to pull out my big KitchenAid mixer but for the past 10ish years I have used my handy dandy potato ricer. It is the best thing on earth for smooth mashed potatoes!!

Easy Meatloaf Cupcakes

Ingredients
  • 1.5 pounds lean ground beef
  • 1 cup bread crumbs - I use Panko Breadcrumbs
  • ½ cup milk
  • 2 eggs
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 carrot, finely shredded
  • ½ teaspoon salt
  • ½ teaspoon oregano
  • ¼ teaspoon pepper
  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard
  • 2 cups mashed potatoes*
Instructions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, combine the beef, breadcrumbs, milk, eggs, onion, garlic, carrot, salt, oregano, and pepper - mix well.
  3. Divide evenly and roll into 16 large meatballs.
  4. Lightly spray muffin tins with non-stick spray and press each meatball into the pan.
  5. Add the ketchup, mustard and brown sugar to a small bowl and whisk until combined.
  6. Top each mini meatloaf with a dollop of sauce and bake in a 350 degree oven for about 25 minutes or until cooked through.
  7. Allow to cool for 3 - 5 minutes before piping mashed potatoes onto the mini meatloaf - I like to use a pastry bag with a 2A tip.
  8. Top each "cupcake" with crumbled bacon and sliced green onion for a sprinkles effect.
Notes
*Easy mashed potatoes - peel and cube 6 - 8 medium potatoes. Cover with water and boil until tender, Drain the potatoes and run through a potato ricer (or mash/use mixer). Mix with 2 tablespoons of butter, ½ - ¾ cup milk, and salt & pepper to taste.

Asian BBQ Drumsticks – Publix Super Meal

With the deal on drumsticks this week at Publix, I knew I had to come up with a recipe using the chicken. One of my all time favorite ways to do drumsticks (and/or thighs) is by whipping up Asian BBQ Drumsticks. While it’s one of the easiest recipes it’s also packed with great flavor.

All you have to do is whip up a simple marinade and let them sit for a bit. Then you just bake the chicken in the oven – super easy. When you want a break from plain barbecue chicken, try this recipe and let me know what you think.

Asian BBQ Drumsticks

Ingredients
  • 2½ - 3 pounds chicken drumsticks
  • ¼ cup brown sugar
  • 1 tablespoon ginger, grated fine (or minced)
  • 2 cloves garlic, minced
  • 2 tablespoons ponzu sauce (or soy sauce)
  • ¼ cup hoisin sauce
  • 1 teaspoon sriracha
  • 1 teaspoon sesame oil
  • 1 teaspoon sesame seeds
  • 1 teaspoon mirin
Instructions
  1. Rinse chicken then dry thoroughly.
  2. In a small bowl, combine all the remaining ingredients and whisk until combined.
  3. Place chicken in a zip top bag (or bowl) and pour the sauce over the chicken. Mix until all pieces are coated.
  4. Seal bag (cover bowl) and refrigerate for 3 - 5 hours.
  5. Preheat oven to 400 degrees.
  6. After the chicken has marinated, place the chicken legs on a baking rack on a sheet pan. Note: you might want to line your sheet pan with foil to catch the sauce that drips off the chicken.It's hard to get off they pan when baked on.
  7. Reserve the excess marinade for basting.
  8. Bake the drumsticks in a 400 degree oven for 30 minutes.
  9. Remove from oven and baste with half of the reserved sauce then bake for 10 minutes.
  10. Turn chicken then baste the other side and cook an additional 10 minutes or until chicken is cooked through.
  11. Grab lots of napkins and enjoy!

Pizza Stuffed Chicken – Publix Super Meal

This week I am sharing a family favorite – Pizza Stuffed Chicken.

I have a habit of stuffing my meat. I am not sure at what point I decided that stuffed meat was better than plain, but I will admit that I do it quite often. I guess since my guys seem to like it, I’m going to keep it up.

Besides tasting great, stuffed chicken has a wonderful presentation. Folks think that you spent all day preparing and somehow magically getting all that goodness on the inside of the chicken. What’s great is that you don’t have to spend a ton of time in the kitchen. This recipe is super simple and you can pair it with a good salad and maybe some garlic knots and you are done!

Pizza Stuffed Chicken

Ingredients
  • 1 - 1½ pounds chicken breast (depending on size you should get 6 to 8 cutlets)
  • 6 - 8 oz mozzarella cheese
  • 6 - 8 oz sliced pepperoni
  • 1 cup flour
  • 1 cup panko bread crumbs
  • 1 egg
  • 1 - 2 tablespoons milk
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • oil for frying
  • marinara or pizza sauce for dipping
Instructions
  1. Preheat oven to 350 degrees.
  2. Place chicken cutlets between sheets of wax or parchment paper and use a meat mallet to pound super thin (approx ⅛ inch thick). Be sure to pound the edges as thin as possible as it will help to seal the rolled chicken.
  3. Place 1 oz of pepperoni and 1 oz of mozzarella cheese in the middle of each pounded chicken cutlet.
  4. Fold the short sides of the pounded chicken over the filling then start at one end and roll the chicken until you have a tightly sealed mound. Repeat this process with all chicken cutlets.
  5. Create your breading station by placing the flour into a shallow dish, beaten egg mixed with milk in another shallow dish and breadcrumbs into a third shallow dish.
  6. Sprinkle each rolled chicken with salt and pepper then roll in the flour.
  7. Next dip the floured chicken into the egg/milk mixture.
  8. Finally roll the chicken in the Panko bread crumbs.
  9. Repeat this with remaining rolled chicken cutlets.
  10. Heat the canola oil in a cast iron skillet or dutch oven to about 325 degrees (about 1½ inches of oil needed in the pan).
  11. Place two cutlets in the hot oil and cook for approximately 3 - 4 minutes until golden brown. Flip and cook the other side until golden brown (2 - 3 additional minutes).
  12. Remove to a baking sheet.
  13. Repeat this process for all chicken bundles.
  14. Place chicken into the 350 degree oven and cook for 15 - 20 minutes.
  15. Allow to drain and cool on a paper lined plate.
  16. Serve with warm marinara or pizza sauce.

Spicy Black-Eyed Peas – Publix Super Meal

This week Publix has all the fixins for a traditional New Year’s Eve meal on sale. At my house we always do the traditional meal of collards with black-eyed peas and cornbread. My mom would always tell me the more I ate, the more money I’d see in the upcoming year. I am not sure about the money part but I have grown to love the tradition and have maintained it for all these years since I left home. Now, I just love the meal and look forward to it each New Year’s Day.

I’ll often do a deconstructed meal for my boys when I opt for a spicy dish. This one really doesn’t work for that so they will just get a PB&J instead. My husband loves them and they are really so easy since you let the crockpot do all of the work!

I know there is some debate on whether or not to soak beans but, it’s what I have always done and my beans turn out how I like them. If you are not a soaker you may have to adjust your temp and/or cook time.

  • 3 cups water
  • 3 cups chicken broth
  • 1 can Ro-tel Tomatoes with Green Chilis 10 oz (spicy is great)
  • 1 bell pepper, chopped
  • 1 onion, chopped
  • 1 jalapeño, chopped
  • 1 hambone (or 5 slices of bacon)
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon cajun seasoning
  • ½ teaspoon pepper
Instructions
  1. Soak beans overnight then rinse.
  2. Add beans and all other ingredients to the crockpot and cook on low for 6 - 8 hours.

Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!

Well this week I saw the olive BOGO and knew that I wanted to whip up some Picadillo! With the holiday craziness, I am all for dinner options that are quick and easy. So instead of doing the recipe on the stove, I decided to throw everything in the crockpot. I do this with my pasta sauce so I figured that the Picadillo would work too. It turned out great and took very little effort.

This is a perfect weeknight meal and great comfort food on a chilly day. As you can see the ingredient list is pretty small so you can whip this one up without breaking the budget. Try my Easy Crockpot Picadillo and let me know what you think.

Ingredients
  • 2 pounds lean ground beef
  • 1 medium onion, diced
  • 2 - 3 cloves garlic, mincced
  • 1 large bell pepper, diced
  • 8 oz can tomato sauce
  • ⅓ cup chopped manzanilla pimento stuffed olives, chopped
  • 2 tablespoons olive brine
  • 2 tablespoons ketchup
  • 1 tablespoon red wine vinegar
  • 1 tablespoon cumin
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 bay leaf
  • ¼ cup cilantro, chopped (+ extra for garnish)
Instructions
  1. Brown ground beef in a large skillet.
  2. Drain any excess fat.
  3. Add onion, bell pepper and garlic then cook 2 - 3 minutes until vegetables begin to soften.
  4. Transfer mixture to crockpot and add the remaining ingredients then mix to combine.
  5. Cook on low for 4 - 6 hours.
  6. Check and season with more salt if needed and serve over steamed rice topped with chopped cilantro.
