It's a nice change of pace from the standard pizza and I think a little more fun. Plus it's easy and economical with the great deals at Publix.

Ingredients
  • Pillsbury Pizza Crust
  • approximately 2 tablespoons olive oil
  • approximately ¼ cup Kraft Parmesan Cheese
  • approximately 2 tablespoons oregano
  • 4 oz pepperoni, chopped
  • 1 cup Kraft Mozzarella Cheese
  • 2 tablespoons butter
  • 1 garlic clove, minced
  • 1 tablespoon fresh parsley, chopped
  • ¼ teaspoon Kosher salt
  • 1 cup pizza sauce - try my recipe HERE
Instructions
  1. Preheat your oven to 400º F.
  2. Roll out the pizza dough and use a pizza cutter to cut it in half (to make it easier to work with.)
  3. Cut the dough into strips about 1½" - 2" thick.
  4. Brush each strip with olive oil and sprinkle with some oregano and Kraft Parmesan Cheese.
  5. Top with chopped pepperoni and sprinkle with Kraft Mozzarella Cheese.
  6. Hold one end of the dough and gently twist.
  7. Place the twisted dough on a parchment lined baking sheet.
  8. Repeat until all dough is used.
  9. Bake at 400º F for 15 - 18 minutes or until golden brown.
  10. While the twists are baking, heat the butter and garlic for about 2 minutes.
  11. Add the salt and chopped parsley.
  12. Once the cooked pizza twists come out of the oven, brush with the butter mixture.
  13. Serve warm with pizza sauce.

Banana & Caramel Yogurt ParfairMy boys are HUGE yogurt fans. While they like it straight out of the cup, they really like it when I kick it up a bit. Jake's favorite yogurt is definitely Liberté®. My husband loves anything coffee related so I figured he could try the Cappuccino and I surprised the boys with a quick and easy treat - Banana & Caramel Yogurt Parfaits!

They were a huge hit and so easy to put together. I gave them to the boys as an after dinner treat and they were gone in a flash. I turned one cup of Liberté® Méditerranée Caramel yogurt into a delicious treat. I simply added a base of crushed chocolate graham cracker to a small glass followed by a quarter of the yogurt and then a layer of bananas. Then I added more yogurt followed by another layer of bananas and a dollop of whipped cream. A little sprinkle of shaved chocolate on top finished it off perfectly!

The great thing is that this treat was super inexpensive. The every day price of  Liberté®  Yogurt is just $1 at Publix and we have a great coupon that will bring them down as low as 60¢ per cup!

I thought I'd share one of the quick and easy meals that I made - Slow Cooked Southwestern Pork Roast. It took me maybe 5 minutes to pop it in my slow cooker and then I just let it cook all day.  My guys devoured this and clean up was a breeze!

Ingredients
  • 2½ lbs boneless pork roast
  • 1 package Lipton Recipe Secrets Onion Soup Mix
  • 1 can Campbell's Bean with Bacon Soup
  • 1 can (15 oz) Le Sueur Very Young Small Sweet Peas
  • 1 can Ro*Tel Original Diced Tomatoes & Green Chilies
  • 3 tablespoons firmly packed brown sugar
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
Instructions
  1. Arrange pork in slow cooker
  2. Combine remaining ingredients and pour over pork
  3. Cook covered on low 8 - 10 hours or high 4 - 6 hours or until pork is tender.
  4. Serve if desired with hot cooked noodles or rice.

If you've never tried the pancakes, now is a great time to check them out. Flatout Franken-Tacos + More Fun Halloween Recipes & A Giveaway!

Halloween is next week and I can't wait!

During this time of the year, I am always thinking about ways to make meals just a little bit festive. I have trained my boys to love the holidays just as much as I do, so they look for me to surprise them with new meals and fun recipes.

Why not add a little excitement to dinner? My Flatout Franken-Tacos are just as easy to whip up as a standard taco, but the fun factor is out of this world!

I start with a Flatout flatbread and fill it with the standard taco fixings. I then fold the Flatout a few times to create a square that contains all those yummy fillings. A quick spread of guacamole followed by creatively placed sour cream, black beans, olives and a tomato slice and the Flatout Franken-Taco comes to life!

Besides being a fun meal, this is also a healthier option than other taco recipes. Flatout flatbread offers a low fat option that's a good source of fiber plus 0g Tran Fat per serving. Each Flatout flatbread is 140 calories or less and Light versions are just 90 calories. Besides the health factor...they also taste great!

You’ll also love the price. These tasty flatbreads and pizza crusts are a great value. You can find them in the deli section at Publix. You might find it hard to pick a favorite variety, so I will offer a suggestion...grab a bunch and freeze them! I always have a couple of packs in my freezer. They defrost beautifully and then you can easily whip up your favorite recipes!

Ingredients
  • Flatout Flatbread
  • 1 pound ground beef
  • 1 medium onion, chopped
  • ½ cup water
  • 1 tablespoon chili powder
  • 1½ teaspoon cumin
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon paprika
  • cheese
  • lettuce
  • guacamole
  • black & green olives
  • tomatoes
  • black beans
  • sour cream
  • taco sauce and any of your other favorite taco fixings
Instructions
  1. Cook the ground beef and onion in a skillet, stirring to crumble until the meat has browned.
  2. Drain the fat and add the water, chili powder, cumin, garlic powder, onion powder, salt and paprika to the meat and stir.
  3. Cook for about 3 -5 minutes then remove from heat.
  4. Place some of the meat down the middle of the Flatout flatbread and top with cheese, lettuce, tomatoes, and your favorite toppings.
  5. Fold the lengthwise sides of the flatbread, slightly overlapping the filling.
  6. Next, fold the ends over the filling creating a square.
  7. Turn the flatbread pocket over and spread with guacamole.
  8. Add black beans for hair.
  9. Use sour cream and black beans to make the eyes.
  10. Black olives make a great scar and green olives are perfect for the neck bolts.
  11. Add a slice of tomato for the mouth and serve.

Need another fun recipe that is super easy? Try my Flatout Grilled Cheese Jack-o-Lanterns with Boonanas. Just fold your Flatout and a little creative trimming with a knife or pizza cutter yields a fun jack-o-lantern. Add some cheese to the middle and grill it for a fun lunch option. The Boonanas are just as easy. You only need to poke some chocolate chips into a banana and serve them up! Quick, festive and delicious!

Baked Egg In A NestIt's hard to believe...but summer is almost over. Soon the kiddos will all be headed back to school. Part of me is happy as I will get a little free time but then I will also miss having my boys at home hanging out with me.

I have told you guys before...I am not a morning person! It typically takes me a little bit of time to get going after I wake up. I know those first few weeks of school I will be moving at a snail's pace. Of course my guys will need a good breakfast so you better believe I will looking to quick and easy breakfast options.

My boys have never liked cereal so they get a hot breakfast every day. One of their favorite things to eat are eggs. I also love eggs - both the taste and the ease of preparation. My oldest would eat a boiled egg every day if he could and my little one is a scrambled egg kind of guy. One of my favorite things to make them for breakfast is Baked Egg In A Nest. I do love the stovetop version...but again, I am not always on my game in the morning. So this baked version allows me to prep, pop them in the oven and just turn on the timer. I can put them together when I wake and by the time they are up and dressed there is a hot and delicious breakfast waiting for them at the table!

Ingredients
  • 4 slices bread
  • 4 tablespoons butter, softened
  • 4 Safest Choice™ Pasteurized Eggs
  • salt & pepper to taste
  • cheese, tomatoes, green onions or your preferred toppings
Instructions
  1. Preheat oven to 375º F
  2. Lightly butter both sides of the bread
  3. Push the bread into a ramekin or muffin cup.
  4. Crack a Safest Choice™ Pasteurized Egg into the center of the bread.
  5. Sprinkle with salt and pepper to taste.
  6. Bake in a 375º oven for 15 - 20 minutes (cook time will depend on how you prefer your eggs - 17 minutes gives you a slightly runny yellow)

You can easily adjust this recipe to serve one or more than 4

I love this recipe because it gives my boys the protein their little bodies need plus I can make these in my sleep. You can make as little as one or enough to feed a whole army! My boys like their eggs where they are just set so I typically bake them for about 17 minutes. This way they get a set white and a slightly runny yellow.
