Menu Plan 3/26 – What’s For Dinner?

It’s another busy week here at my house. The only night we don’t have to throw down dinner and rush to an activity is tonight. I will actually be able to make dinner and we can sit, relax and eat in peace. All of the other nights are quite hectic, so I will depend on meals that I can prep early in the day so it will be ready when I need it.
My family will be headed over to my house for Easter dinner. I debating on which mac & cheese recipe to make. I listed my all time favorite mac & cheese recipe below but also have a decent crockpot option that will save me a little bit of time. We’ll have a great meal then head outside to find eggs. I am hoping the weather cooperates so we can spend a good part of the afternoon outside.

Menu Plan 2/12 – What’s For Dinner?

It’s that time of week again….time to figure out what’s on the menu for the week.
The menu this week was a group effort. My little one chose spaghetti, the oldest requested chicken pot pie and my husband would eat chili every week if he could.
I added in a few recipes that I wanted to do – voila…dinner is planned! I’ll need a few items for my drunken beans but other that that I have everything on hand.

We talk a lot about ways to reduce your budget around here. Most of you guys visit me because you are looking to save money (some of you guys visit for my wit and humor – right? – tee hee).
One of the easiest ways to cut your spending is to make at least one meal meat-free each week. Now, if you are like me and live with major carnivores who think that they must have meat at every meal – I am here to tell you that you can appease those hungry meat lovers. You just have to get creative!
Beans are great to use in place of meat. Beans and cornbread is a staple here in the South and a welcome sight at my house. Especially on a chilly night, you just can’t beat it. My buddy Liza over at Addicted to Saving sent over a great recipe that she came up with using Hurst Family Harvest Beans – Sweet Pepper & Asparagus Black Bean Soup.
Honestly, I would have never thought to use asparagus with black beans. Her recipe sounds (and looks) amazing. This is one of those recipes that I could make on Sunday afternoon and then eat throughout the week for lunch. The best part is that I would bet that you could put the entire meal together for around $5!

Well guys, this is the last week of my Hurst Family Harvest giveaways. I have had so much fun sharing recipes and giving away lots of prizes.
