Publix Super Meals – Mediterranean Vegetable Couscous with Shrimp + Win A Set Of Produce Keepers!

Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!
I have a great recipe for you guys this week! It has some of my all time favorite things combined into one fantastic meal – Mediterranean Vegetable Couscous with Shrimp.
Now for all of you who are opening a new window to look up couscous – I will save you some time. Couscous is simply tiny granules of pasta – it’s just coarsely ground semolina (a type of wheat). It is light, fluffy, delicious and super easy to prepare. I love it as an alternative to pasta or rice. It’s especially great as you can have it prepared in 5 minutes.
I usually buy it in large canisters so I can cook what I need. I noticed that the boxes of Near East Couscous are on sale in the current Publix ad so I knew it was time to share this recipe!
This recipe is super versatile. You can use any veggies you have on hand. I peeked in my fridge and noticed my Good Cook Produce Keepers filled with tomatoes, lemon and zucchini. I grabbed some shrimp from my freezer and in no time flat – DINNER! The best part is that this recipe makes a ton. You better believe I have been eating this for lunch all week long!
Seriously how can you go wrong combining couscous, a ton of delicious veggies, capers, olives and feta. Oh my, I might need to go have a snack while I am typing. Here’s the recipe:
- 1 cup zucchini, diced into chunks
- 1 cup portobello mushrooms, diced into chunks
- 1 cup cherry tomatoes
- 4 cups fresh spinach
- 2 cloves garlic, minced
- 1 shallot, chopped
- 2 tablespoons capers
- 1⅓ cups couscous
- 2 cups chicken broth
- 2 tablespoons balsamic vinegar
- 3 tablespoons olive oil (divided)
- ¼ teaspoon salt
- ¼ teaspoon pepper
- ½ teaspoon oregano
- ½ – 1 pound cooked shrimp
- ¼ cup Kalamata Olives
- ¼ cup feta cheese
- Lemon wedges
- Heat 1 tablespoon of olive oil in a large skillet with lid.
- Add zucchini, mushroom, shallot and onion – saute for 2 – 4 minutes until slightly tender.
- Add spinach and wilt.
- Add tomatoes, chicken broth, capers, salt, pepper and oregano and bring to a boil.
- Stir in couscous and cooked shrimp, cover skillet and remove from heat.
- Allow to sit for 5 minutes and then remove lid and fluff with fork.
- Mix balsamic vinegar and remaining olive oil then pour over mixture and toss.
- Serve topped with olives, feta and the juice of a lemon wedge.

It’s summer time here at my house. While summer may not actually start until June 21st, the boys are out of school and we are in summer mode! Summer is just a bit more relaxed and low key. Time to call up some friends, fire up the grill and make some summer memories. Whether it’s the 4th of July, or a Sunday afternoon, there’s nothing better than a summer party.
Here in the south, it gets hot and I mean H-O-T! The best way to cool down is with a cold treat. The folks at Bomb Pop asked if they could send me a few boxes of the Original treats. You know I said yes…my boys would have been so sad if I declined those yummy treats. They jumped for joy when I pulled a box out as an after dinner dessert. Of course since I would be the one doing the review, I had to give one a try as well. Blogging can be such hard work–tee hee!)
My boys loved the Bomb Pop and have already polished off 3 or 4 more since I got them. I thought they were great as well – very refreshing and perfect summer treat. I have to admit they brought back memories of me standing in line the ice cream truck when I was little.
Why not put together your own summer party. Call up friends and family and tell them to mark their calendar. Pick up some hot dogs, burgers and a couple boxes of Bomb Pops while you are shopping at Publix. Sometimes the best parties are those that aren’t too fussy.

Good Cook Nonstick Cutlery Review & Giveaway

Last week a box full of Good Cook Nonstick Knives showed up at my door. I was so excited to see them and felt kinda like a kid at Christmas. I spend a lot of time in the kitchen and have been using a set of 2 ceramic knives for almost all of my food prep. I do love them but they just aren’t always the right tool for the job. Now I have a great new set of knives that include a big variety to suit all my needs. Here’s what was in my box:

This past weekend was very dreary so we opted to stay home and get some things done. Since I got a big beautiful produce box on Thursday,instead of going out for our typical Saturday dinner out, I grabbed the Good Cook knives and gave them a test drive. I decided to whip up some Spinach & Feta Chicken Rollups. I added some steamed veggies and fresh black eyed peas. Who needs to go out with a delicious meal like that?!

The first thing I did was chop the veggies. The blades on all the knives are non-stick coated and have soft-grip, ergonomic handle that fits comfortably in the hand and provides better control when slicing and when hands are wet. I loved the little pairing knife for slicing up the carrots. The smaller blade allowed for good control so I could get even slices. When steaming veggies you have to make sure the items are equal so the food cooks evenly. I tried the Santoku knife first but settled in with the smaller pairing knife…it worked like a charm. The Santoku knife was a great choice for chopping my onions. I zipped through the onion quickly and without a tear shed.
Next I grabbed the chef knife and quickly chopped the big bunch of spinach. The knife was larger and the big 8 inch blade made getting through the bunch quick and easy. A quick wash and I then used it to slice large chicken breast into thin fillets. I have to say that I was extremely pleased with all the knives and will definitely put them to good use often as I prepare meals each week. Another feature that makes these knives a big hit for my household is that each knife comes with its own fitted safety sheath. My boys know to keep their little fingers off my kitchen knives but the safety sheath adds another aspect of protection since we all know 5 and 7 year old boys don’t follow the rules all the time

- 4 Chicken Breast Fillets (pounded thin)
- Toothpicks
- 3 Tablespoon Olive Oil
- Bunch of Spinach
- ½ Cup Chopped Onion
- Zest of 1 Lemon
- 4 oz Crumbled Feta
- Salt & Pepper To Taste
- Egg Wash
- Bread Crumbs
- Heat 1 tablespoon of olive oil and sautee onion until translucent. Add spinach to onions and heat until wilted. Remove from heat and add feta, lemon zest and salt & pepper to taste. Remove from pan and set aside.
- Pound chicken fillets until thin. Place ¼ of spinach mixture on chicken breast and roll. Secure with toothpicks. Dip chicken in egg wash and then roll in breadcrumbs.
- Heat remaining olive oil and cook chicken until done.

Hillshire Farms Sausage Great On The Grill + Final Publix Gift Card Giveaway

Well we got some great weather this past weekend in Atlanta and I was hoping the warm weather was here to stay. It’s a bit chilly today but I have hopes for a great weekend. When the weather is warm I love to fire up the grill. I can usually even get my husband to work the grill so that I only have to focus on preparing the side dishes.
One of our family favorites can be done all at once – kabobs! Grab a package of Hillshire Farm rope sausage, some bell peppers, onion, mushrooms – slice everything up and throw them on a skewer. A few minutes on a hot grill and you have your protein and your sides all done at once. Pair it with a side salad and you have dinner in under 30 minutes from start to finish!

Kabobs are easy, delicious and a fun change of pace. My boys love them because they taste great and they get to play with their food a bit. Grab a couple of packs of Hillshire Farm Sausage and whip up some kabobs or just throw the links on the grill and then serve them in a bun. What a great change of pace from your typical ground beef or chicken meals!

Turkey Sausage and Greens
1 Turkey Kielbasa Rope – cut into circle slices
half an onion – diced
2 bushels of collard greens
2 cups chicken broth
seasonings to taste
1 tbs olive oilWarm olive oil in the pan and then add sausage and brown
Once sausage has a good crust on it, add the onion and sautee until the onions are translucent (about 3 minutes)
Add collards a handful at a time – once the handful has wilted down a bit, add more, etc.
Once all the greens have wilted down, season to taste (I add garlic powder, sea salt, cracked pepper and red pepper flake)
Stir and let cook for a couple minutes then add chicken broth and stir again
Let cook, stirring occasionally, for 15-20 minutes
Serve!Goes great with GRITS!!!
