SOUTHWESTERN RANCH SALAD

I know it’s Labor Day so you are probably thinking about your grill and not looking for tasty salad recipes. But, if you are like me you are probably already planning for the rest of the week…once everything goes back to normal. Short weeks can be great but they have a way of throwing me off my routine a bit. That’s why easy dinner recipes are a must here at my house.

If you happen to be grilling up chicken today…just throw on a couple of extra pieces and you can whip up this recipe a little later in the week.  You’ll cut the prep time down to almost nothing! A little planning can make the rest of the week so much easier!

Once you have your grilled chicken you can whip up a delicious Southwestern Ranch Salad in a flash. My family loves this one as it’s full of flavor. There’s beans, corn, cheese and of course my boys get to pour on their favorite…Wish-Bone Ranch Dressing!

When in comes to fast dinner options, this one is a winner all around. My boys get a big serving of salad and a hearty helping of protein. No complaints from this momma! It’s quick and a much better option than going through the local fast food drive thru. I can get everyone fed and then we are on to the next thing on our to-do list.

Southwestern Ranch Salad

Ingredients
  • 1 medium tomato, diced
  • 1 can (15.5 oz.) black beans, rinsed and drained
  • 1/2 cup frozen whole kernel corn, thawed
  • 1/2 cup sliced red onion
  • 6 cups torn romaine lettuce leaves
  • 1 lb. cut-up cooked chicken
  • 1/2 cup shredded Monterey Jack cheese (about 4 oz.)
  • 1 avocado, sliced
  • 1 cup broken plain tortilla chips
  • 3/4 cup Wish-Bone® Ranch Dressing
Instructions
  1. Combine tomato, black beans, corn and red onion in medium bowl. Season with salt and pepper, if desired.
  2. Arrange lettuce in large glass serving bowl, then layer in veggie black bean mixture, chicken, cheese, avocado and chips.
  3. Serve with Wish-Bone® Ranch Dressing.
