Cod Sammie With Apple Slaw

I have been sharing quick and easy meal ideas…I know many of you guys are busy moms like me. Please tell me that I am not the only one having a hard time getting into a good routine now that school has started back.

It just seems like time flies once the boys get home from school. I am on a mission to find easy and delicious recipes that allow us to still fit in all the things have to accomplish before bedtime! This Crispy Cod Sandwich with Tangy Apple Slaw was a huge hit with my guys and came together with almost no effort. I thought I’d share it in case you needed a busy weeknight option.

I made the slaw before the boys got home from school. It takes maybe 10 minutes to prep. You could cut down on that time if you went with a bagged slaw mix. You’ll want to give it time to sit in the fridge…you could even do it the night before if you wanted. Once the boys were home, I preheated the oven and cooked the Mrs. Paul’s Garlic Herb Cod. The fish takes about 30 minutes to cook so we were able to knock out some homework while dinner was in the oven…you know I am all about multi-tasking!

Once the timer went off, all I had to do was assemble the sandwich.

Crispy Cod Sandwich With Tangy Apple Slaw

Ingredients
  • 4 Mrs. Paul’s® Garlic Herb Cod (cooked according to package instructions)
  • 4 sub rolls, cut in half
  • 1 Apple, cored and julienned (I like a good Fuji apple)
  • 1 cup cabbage, thinly shredded
  • 1 carrot, julienned
  • 1 green onion, thinly sliced
  • 1/4 cup mayonnaise
  • 1/4 teaspoon dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 1/2 teaspoons honey
  • 1 teaspoon poppy seeds
  • salt & pepper to taste
Instructions
  1. Combining the apple, cabbage, carrot and onion and place in a large bowl.
  2. In a small bowl, whisk together the mayo, dijon mustard, vinegar, honey and poppy seeds.
  3. Pour over the vegetable mixture and season with salt and pepper to taste.
  4. Cover and refrigerate for at least an hour before serving.
  5. To serve, place a Mrs. Paul’s® Garlic Herb Cod fillet into the sub roll and top with a heaping spoonful of the slaw.
