Grilled Fish Tacos With Hummus

You guys know that I’m a sucker for anything holiday related. I’ll take any opportunity to celebrate and holidays give me a good excuse to call up my buddies and organize a gathering.

The Fourth of July is no exception. We plan on having a big group of friends over this year to celebrate. We’ll start the day by cooling off in the pool and finish off the night with a big firework display. I have tons of festive snacks planned and of course I’ll have my husband fire up the grill for a big cookout. This year I am serving burgers, hot dogs and Double Decker Grilled Fish Tacos!

If you are planning your own party you are going to need lots of food. The folks at Sabra have a ton of great recipe ideas to help you create your own Feast of the 4th Menu. Spread delicious Sabra Lemon Twist Hummus over a soft tortilla then wrap that around a hard shell tortilla. Fill with grilled fish and a delicious slaw for the most amazing taco that you’ll ever eat. Double Decker Grilled Fish Tacos!

Ingredients
  • 1 pound fish (cod, tilapia or mahi mahi are my favorites)
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon garlic, minced
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 1 teaspoon Sriracha sauce
  • 2 tablespoons canola oil, divided
  • 2 – 3 limes
  • 2 cups cabbage, thinly sliced
  • 1 medium red onion, thinly sliced
  • 1/2 cup fresh cilantro, roughly chopped
  • 1 teaspoon honey
  • 1 tablespoon red wine vinegar
  • 10 soft tortillas, warmed
  • 10 hard shell corn tortillas, warmed
  • 1 10 oz container Sabra Lemon Twist Hummus
Instructions
  1. Place the fish in a bowl and add the cumin, chili powder, Sriracha, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, minced garlic, 1 tablespoon of oil and the juice of one lime.
  2. Toss the fish in the mixture and allow to marinate at least 10 minutes.
  3. While the fish is marinating, make the slaw by combining the thinly sliced cabbage, onion, chopped cilantro, honey, red wine vinegar, 1 tablespoon of oil, juice of one lime and 1/2 teaspoon of salt and 1/4 teaspoon of pepper.
  4. Taste and adjust seasoning – adding salt and lime juice as needed.
  5. Heat your grill and clean the grates. Oil the grates slightly to help reduce sticking.
  6. Place the fish on the hot grill and allow to cook for about 4 – 5 minutes.
  7. Gently flip the fish and allow to cook another 3 -5 minutes until the fish is cooked through.
  8. Build your taco by spreading about an ounce of Sabra Lemon Twist hummus on the warmed soft tortilla then wrap around the warmed corn tortilla, Add some of the grilled fish and top with a big portion of slaw. You can also add avocado, sour cream or any of your favorite fixings.
