Chocolate Dipped Strawberry Yogurt Drops

With two hungry boys I am always trying to come up with easy and delicious snacks. By the time they get home from school they are starving. I’ve learned to be prepared so that when they walk in the door I have good options so they don’t even think to ask for the junk. I have a special drawer dedicated specifically to after-school snacks. There’s also a section of the fridge where they can look if there’s nothing in the drawer that floats their boat. This week I added a frozen treat to their list of options!

For some reason my boys love cold snacks and treats. They will go for things like ice cream, frozen yogurt, and popsicles over a candy bar any day. Maybe it’s because it gets so hot here in the South? There’s nothing like a cold treat to cool you off and satisfy your sweet tooth all at the same time!

I happen to have an excess amount of strawberries in my refrigerator. Chocolate covered strawberries were my first thought but of course my hips decided that might not be the best idea. I looked in my pantry and spotted the Carnation Breakfast Essentials® and suddenly…chocolate covered strawberries were still a possibility! It took me a couple of attempts but my boys decided that my final version was “absolutely yummy!”

Of course you can simply freeze plain yogurt and it’s delicious but this is the kicked up, super tasty version! My”Chocolate Dipped Strawberry” Yogurt Drops version combines vanilla yogurt, Carnation Breakfast Essentials® and fresh strawberries.

They are so easy to make. All you need is a blender and maybe 5 minutes to drop them out on a pan. The hard part is waiting for them to freeze. After an hour or so in the freezer, you get a delicious, melt in your mouth yogurt drop that is so refreshing! Perfect for an after-school snack or really any time of the day. This is a better for you snack that your kids will absolutely love…that is if you don’t eat them all before they get home!

Now, while these are very kid friendly these are fantastic for all ages. They are great when you are craving something sweet but want to keep the fat and calories low. Make a batch and let me know what you think.

“Chocolate Dipped Strawberry” Yogurt Drops

Ingredients
  • 1/2 cup lowfat vanilla yogurt
  • 1/3 cup Rich Milk Chocolate Flavor Carnation Breakfast Essentials® Powder
  • 1/2 cup fresh strawberries, washed & hulled
Instructions
  1. Blend all ingredients together until smooth.
  2. Use a spoon to drop about 1/4 teaspoon sized droplets of the mixture onto a parchment lined sheet pan.
  3. Freeze for 1 – 2 hours or until frozen solid.
  4. Peel off the parchment and enjoy!
  5. Store in a container or plastic bag in the freezer.
