Oatmeal Snickerdoodle Cookies

I love this time of the year. The combination of family, friends and food make the holidays so much fun! I usually end up spending a good chunk of time in my kitchen but I really don’t mind at all. Being able to whip up delicious foods to share with those that I love makes that time in the kitchen totally worth it.

While I do have some traditional items that I serve every year, I am always looking for new recipes to share with everyone.  The folks at Quaker® sent me their new Oatmeal Snickerdoodle Cookie recipe, created exclusively for Publix® shoppers, and I couldn’t wait to try it out – we are huge oatmeal fans. Let me tell you, that was the best oatmeal cookie I have ever had. I made a big batch for the baseball party we had a couple of weeks ago, and the plate was empty by the end of the night!

I have a cookie swap coming up in a few weeks, and this cookie is a definite on my list to make. My husband has already put in a request for another batch, so I’ll probably have to double the recipe so that I have enough to share!

Oatmeal Snickerdoodle Cookies

Serves: 36 cookies
Ingredients
  • [u]Cookies[/u]
  • 1 1/2 cups Quaker® Old Fashioned Rolled Oats
  • 1 cup unsalted butter, softened to room temperature
  • 1 1/3 cups sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • [u]Topping[/u]
  • 1 Tbsp Quaker® Old Fashioned Rolled Oats
  • 1/4 cup sugar
  • 1 tsp cinnamon
Instructions
  1. Line 3 large cookie sheets with parchment paper.
  2. Cream the butter and sugar until light and fluffy.
  3. Mix in the egg and vanilla.
  4. In a medium bowl, whisk together the flour, oats, cream of tartar, baking soda, salt, and cinnamon.
  5. Slowly blend the dry ingredients into the butter mixture.
  6. Chill the dough for 30-45 minutes.
  7. Preheat oven to 350º.
  8. In a small bowl, mix the topping ingredients.
  9. Roll 1 rounded Tbsp. of dough into a ball and roll the balls into the cinnamon-sugar-oat topping.
  10. Bake cookies about 10-12 minutes.
  11. Cool for about 10 minutes and ENJOY!
