The recipe I am sharing today is actually two recipes in one. The only difference in the recipes is the way you decide to cook your fish. You can opt for the Skinny Baked Fish Sticks or fry them and have Crispy Homemade Fish Sticks.

I generally bake them but I thought I’d show you both options in case you aren’t counting calories. My boys were more than happy to have a big batch of crispy fish sticks. My husband also loves this recipe and always reminds me that I should make it more often.

If you have never made homemade fish sticks you are really missing out. It only takes maybe 10 minutes more than opening a bag of frozen fish sticks but the taste is 100 times better! You can play with the seasoning to see which you prefer. I generally do Old Bay or Lemon Pepper but you could really mix in any of your favorite spices.

Skinny Baked Fish Sticks (or Crispy Homemade Fish Sticks!)

Ingredients
  • 1 – 1 1/2 pounds cod
  • 3/4 cup flour, for dredging
  • 1 tablespoon Old Bay Seasoning (or lemon pepper)
  • 1/2 teaspoon salt
  • 1/4 teaspoon flour
  • 2 eggs
  • 1 cup Panko bread crumbs
  • Cooking Spray or Canola Oil
Instructions
  1. Preheat oven to 375º F.
  2. Cut the fish into strips.
  3. Combine the flour, salt, pepper and Old Bay and place in a shallow dish.
  4. Beat eggs and pour into a shallow dish.
  5. Place the breadcrumbs into a shallow dish.
  6. Roll the fish in the flour mixture, then dip in the egg and finally roll in the breadcrumbs.
  7. If doing the “Skinny version” place each breaded piece of fish onto a baking sheet sprayed with cooking spray.[url href=”https://www.iheartpublix.com/wp-content/uploads/2014/04/fish-sticks.jpg”][img src=”https://www.iheartpublix.com/wp-content/uploads/2014/04/fish-sticks.jpg” alt=”” width=”500″ height=”357″ class=”aligncenter size-full wp-image-183994″][/url]
  8. Continue until all the pieces are breaded.
  9. If baking, spray the breaded fish with a light coat of cooking spray then bake at 375º F for 20 minutes until browned.
  10. If frying, heat canola oil to 350º F and fry for about 2 minutes per side until golden brown.

  • (2) Kraft Shredded Cheese, (Swiss & Cheddar) 2/$5

Serve with green beans and mac and cheese for a full meal. Total – $22.95 but you have pasta and cheese for other recipes this week and leftover breadcrumbs for future meals!
