Welcome to this week’s Publix Super Meals. Each week I am going to share a recipe to help you take the Publix Super Deals and turn them into Publix Super Meals!

When I saw the sale on bell peppers at Publix I knew exactly what was going on my menu this week. Stuffed Bell Peppers are one of the easiest, most economic and delicious meals that you can throw together. I’ll be honest, when I make them I usually don’t even measure. I just toss the ingredients together and the peppers come out perfect every time.

I always try to make extras so that I can have it for lunch the next day. Now, my boys are not overly fond of the bell pepper but they will eat the filling all day long.

Give these a try and let me know what you think!

We absolutely love these, but I have gotten lazy with it and just chopped up the peppers and put all the ingredients in a big casserole dish. Still just as yummy.

Wonder if they could also be done in the slow cooker. They look good. Been thinking about stuffed peppers lately.

  3. Kimberly Farrington says

Roasting the peppers while you get the stuffing together is a great alternative to parboiling. They hold their flavor better & get a great color to them also.
