What’s For Dinner 10/11

Sorry for the delay guys, my brain is off by a day. Since we were traveling yesterday I feel like today is Monday :-)

I think I have come up with a pretty good menu this week. Nothing is too difficult to cook and should be very budget friendly too!  I have a bunch of this stuff on hand so I might really just have to supplement with some produce and meats not in my freezer!

I love that Publix has the Boston Butt Roast for $1.99/lb. I usually just toss mine in the crockpot until it is falling apart and pull it apart with some barbecue sauce. I know you guys have to have some other ideas for me? I have a couple of roasts in the freezer from the last time they were on sale and would love to hear some ideas on what you do with a Boston Butt Roast.

Pork Butt Recipe from you guys :-) (hopefully!)

Sirloin Tip Roast, $3.99/lb

    Pork butt recipe: Pulled pork
    1 pork butt
    1/2 cup of rice wine vinegar
    1/2 apple juice
    1/2 bottle of your favorite bbq sauce
    1 1/2 onion sliced thin
    1 Tbsp garlic
    salt and pepper

    Add pork butt,garlic,vinegar,onion,apple juice, salt ,and pepper to a crockpot. cook on low for 6-8hrs or high for 3-5 hrs. When the butt is done ,shred the meat and put back in the pot and add bbq sauce. I reserve some of the pork ( about a pound) before I put the bbq sauce and I make quesadillas and or pulled pork tacos the next night. I put the reserved pork in a tupperware and add fresh lime juice and cilantro to it. The rest of the bbq pulled pork can be served on hamburger buns with cole slaw or served over rice. ENJOY!

    Pork butt recipe:
    marineate in worchestier, garlic powder, onion soup mix overnight.
    Put the roast in your crockpot cover it in root beer :) cook for 7-8 hr. Drain root beer return to crock pot adda bottle of your fav bbq sauce cook for about an hr on low. Enjoy!

    Any type of roast you want to use. One package of lipton powdered onion soup mix (should have a coupon) and one can of Campbell’s cream of mushroom soup(should have coupons too). Salt and pepper to taste. Cook on low for 8 hours or high for 5 hours in the crock pot. Comes out soooooo yummy!!!!! It has really good gravy in the bottom after cooking all day. Would be really good with mashed potatoes or rice. :)

    Totally different than bbq! I love to do pork carnitas. I don’t have a recipe. you could google one. I ust put the boston butt in the crockpot with some taco seasoning and a can of low salt diced tomatoes. Take it out and shred it when it’s done and put it in flour tortillas with lettuce and avocado-YUMMMM

    Rub your Boston Butt roast with 2 packages of taco seasoning and cook for 12 hours on low in the crockpot. Remove the roast and shred. Skim any fat from the juices in the rockpot and then stir the meat back into the juices. Heat through and serve over rice with cornbread on the side. The second night you can do pork tacos with the meat. I taste and sometimes add some more taco seasoning if it needs more flavor. Then if you still have some leftovers you can mix the meat with BBG sauce and serve it on buns. We love this over the rice because it is so different than most dishes.

      Forgot to mention, I did a side of Cilantro Lime Rice. My hubby ate it as tacos and I put the meat and rice in a bowl to cut down on calories. So very tasty! For the rice, I made basmati rice according to the package directions, but using 1/2 water and 1/2 chicken broth. Add the juice from about 1/2 of a lime with the liquid. When it’s finished cooking, stir in some fresh chopped cilantro. I used about a handful.

    Hubby marinates the butt roast in mojo the night before. Browns it real quick on the grill in the morning and puts in pan (cover tightly with aluminum foil) Slow roast in oven at 200 degrees for most of the day—depending on size of roast, anywhere from 4 – 6 hours….to die for :)

    We typically keep it “carnitas” style but sometimes change the ingredients-

    – toss pork in crock pot, rub with paprika, garlic powder, salt, pepper.
    – add 1-2 onions quartered, garlic cloves (i like ALOT)
    – bottle of verde sauce
    – lime
    – cumin
    – and any veggies you want! cook on low for 8-12 hrs

    Oh, and u can add some chicken broth too if you really want, we always add lots of jalapenos cause we like it spicy

    I’m not really familiar or comfortable with meats other than pork and chicken, so all the roasts and steaks are puzzling! I really want to make the marinated tri-tip steak–do you use the top sirloin steaks for that recipe? What do you use the sirloin tip roast for–the beef stir fry?

      This sounds great; thanks for sharing! I’m going to try it too, but in a crock pot; can’t imagine leaving an oven on for over 12 hours!

    BBQ pulled Pork

    1 15 ounce bottle of BBQ sauce
    1 can of Dr. Pepper

    Dump and pour in the crock pot for 6-8 hours, low or 4 hours, high. Pull out, shred. Or just put chunks on plates! I would say slice but it falls apart.

    Tyler Florence’s recipe for pulled pork boston butt on Food network is fabulous…I make it for every pot luck we go to these days!

    Pulled pork is on my list as well. Love it!! I also serve it the next day on top of a loaded baked potato (cheese, bacon, etc.)– it sounds strange but it’s SO good! I ordered it at a restaurant once and now enjoy it at home! :)

    Instead of BBQ – use Mojo – Spanish marinade. Add some onions and let it cook away. Absolutely delicious with rice and beans!

    We make a bigger Boston Butt and freeze off smaller portions. Then, we use them to make fried rice as a quick meal later in the month.

    All we do to make the boston butt is slice an onion in the bottom of the crock pot, put salt and pepper on the boston butt itself, and occasionally pour a beer over it for some extra flavor. Works without as well.

    Anyone know what’s a good price for a Boston butt? I don’t know that I’ve ever bought one, but all these recipes make it sound so yummy! Can’t wait to get one!

      $1.99 is a great stock-up price. Now would be the time to buy it. They are typically four to five pounds so you are looking at less than $10 to give you TONS of food (leftovers, too!)
